Chicken Cacciatore
Ingredients
- 1 lb. boneless chicken breast (cut into bite-sized pieces)
- 1 green bell pepper, coarsely chopped
- 1 red bell pepper, coarsely chopped
- 1/2 large red onion, coarsely chopped
- 1 can/jar (4 oz.) sliced mushrooms
- 1 can (14.5 oz.) diced tomatoes with basil, garlic, and oregano
- 1 large jar (24 oz.) spaghetti sauce
- 1 lb. rotini pasta
- salt and pepper to taste
Dutch Oven Directions
- Pre-heat dutch oven over coals or camp stove.
- In your dutch oven, brown chicken with salt and pepper to taste.
- Add onion, bell pepper, diced tomatoes, mushrooms, and spaghetti sauce.
- Stir well and and make sure that it is heated through.
- Cook for 45-60 minutes at 350°.
- Cook pasta separately and combine at the end, or you can add uncooked pasta to dutch oven after step 4. Be sure to add some extra water as the pasta will soak up the liquid.

- In a large skillet or deep pan, brown chicken with salt and pepper to taste.
- Add onion and bell pepper, and heat for 5-10 minutes.
- Add diced tomatoes, mushrooms, and spaghetti sauce.
- Stir well and and make sure that it is heated through.
- Cook on low-medium heat for 30 minutes or until vegetables are tender.
- While chicken mixture is cooking, cook pasta separately and combine at the end.
Serves 6.
