2 eggs 1 cup milk 1 cup sugar 4 tbsp. vegetable shortening (melted) 2 cups flour 4 tsp. baking powder salt
Cinnamon Sugar Mixture
1 cup sugar 2 tsp. cinnamon
Grease bottom and sides of dutch oven, or use parchment liner. Beat two eggs in bowl and add to dutch oven. Add milk, sugar, and melted vegetable shortening to the dutch oven. Stir and mix together. Add flour, baking powder and a dash of salt. Stir and mix together. Mix together cinnamon and sugar in a bowl for the swirl mixture. Using ½ of the swirl mixture make 4 little mounds on top of the cake mixture in the dutch oven. Using a plastic knife or other plastic utensil, swirl the cinnamon/sugar mixture into the cake mixture.
Put cover on oven and bake 20 minutes at 350 degrees. 16 coals on top and 8 on bottom for a 12” dutch oven.
Remove lid and sprinkle remaining cinnamon and sugar mixture on top of coffee cake. Put lid back on and cook remaining 10 minutes.
Serves about 8.
