Cinnamon Swirl Coffee Cake
Ingredients
Cake Mixture
- 2 eggs
- 1 cup milk
- 1 cup sugar
- 4 tbsp. vegetable shortening (melted)
- 2 cups flour
- 4 tsp. baking powder
- salt
Cinnamon Sugar Mixture
- 1 cup sugar
- 2 tsp. cinnamon
Directions
- Grease bottom and sides of dutch oven, or use parchment liner.
- Beat two eggs in bowl and add to dutch oven.
- Add milk, sugar, and melted vegetable shortening to the dutch oven. Stir and mix together.
- Add flour, baking powder and a dash of salt. Stir and mix together.
- Mix together cinnamon and sugar in a bowl for the swirl mixture.
- Using 1/2 of the swirl mixture make 4 little mounds on top of the cake mixture in the dutch oven. Using a plastic knife or other plastic utensil, swirl the cinnamon/sugar mixture into the cake mixture.
Put cover on oven and bake 20 minutes at 350 degrees. 16 coals on top and 8 on bottom for a 12" dutch oven.
Remove lid and sprinkle remaining cinnamon and sugar mixture on top of coffee cake. Put lid back on and cook remaining 10 minutes.
Serves about 8.
