Roasted Red Potatoes
Roasted red potatoes coated in herbs, garlic, parmesan cheese and salt and pepper. An easy savory side dish to pair with almost any dinner.
You can use full size potatoes cut into 1" pieces, or use baby red potatoes cut in half.
Ingredients
- 1.5 lbs (~10 full size potatoes) cut into 1" pieces OR use baby reds cut in half
- 1/4 cup olive oil
- 1-1/2 teaspoon garlic powder or 2 teaspoons garlic minced
- 2 tsp coarse kosher salt
- 1/2 tsp black pepper
- 2 tsp Italian seasoning
- 1/4 cup grated parmesan cheese
- 1 tbsp dried parsley

Directions
- Preheat oven to 400°.
- Line a cooking/baking sheet with parchment paper or foil. Spray sheet with cooking spray.
- Place potatoes in a large bowl.
- Add olive oil, garlic, salt, pepper, Italian seasoning, parmesan cheese, and dried parsley. Toss to coat potatoes and distribute seasonings evenly.
- Spread potatoes evenly in a single layer on the cooking sheet.
- Bake for 35-45 minutes until the potatoes are golden brown and fork tender.
