Teriyaki Chicken

Ingredients

  • 1 to 1.5 lbs. chicken breasts, cut into bite size pieces
  • 3 tbsp oil (peanut or sesame)
  • 1 cup water
  • 1/4 cup soy sauce
  • 1 tsp ground or minced ginger
  • 1 clove garlic, minced (optional)
  • 1/4 cup brown sugar, packed
  • 2 tbsp honey
  • 2 tbsp cornstarch
  • 2 tbsp rice vinegar
  • 1/4 cup mirin
  • 1 tbsp peanut oil (or sesame)
  • 2 cups white rice (instant or regular)

Directions

Sauce

  1. In a 2-cup measuring cup (or larger) add 1 cup water, corn starch, soy sauce, ginger, garlic, brown sugar, honey, rice vinegar, mirin, and 1 tbsp oil
  2. Mix sauce with fork or whisk until blended; set aside

Rice

  1. Prepare 2 cups of white rice according to directions.

Chicken

  1. Heat large skillet to medium-high heat
  2. Heat 3 tbsp of oil
  3. Coat chicken pieces in all-purpose flour
  4. Add chicken to oil, and cook until done
  5. Add sauce from measuring cup to skillet, and bring to boil, stirring constantly. Sauce will begin to thicken.
  6. When desired thickness is reached, remove from heat
  7. Serve over rice

Serves 3-4.
