Teriyaki Chicken
Ingredients
- 1 to 1.5 lbs. chicken breasts, cut into bite size pieces
- 3 tbsp oil (peanut or sesame)
- 1 cup water
- 1/4 cup soy sauce
- 1 tsp ground or minced ginger
- 1 clove garlic, minced (optional)
- 1/4 cup brown sugar, packed
- 2 tbsp honey
- 2 tbsp cornstarch
- 2 tbsp rice vinegar
- 1/4 cup mirin
- 1 tbsp peanut oil (or sesame)
- 2 cups white rice (instant or regular)
Directions
Sauce
- In a 2-cup measuring cup (or larger) add 1 cup water, corn starch, soy sauce, ginger, garlic, brown sugar, honey, rice vinegar, mirin, and 1 tbsp oil
- Mix sauce with fork or whisk until blended; set aside
Rice
- Prepare 2 cups of white rice according to directions.
Chicken
- Heat large skillet to medium-high heat
- Heat 3 tbsp of oil
- Coat chicken pieces in all-purpose flour
- Add chicken to oil, and cook until done
- Add sauce from measuring cup to skillet, and bring to boil, stirring constantly. Sauce will begin to thicken.
- When desired thickness is reached, remove from heat
- Serve over rice
Serves 3-4.
